1 lb radishes, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon sea salt

1/2 teaspoon black pepper

Zest of 1 lemon

1 tablespoon fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Radishes: Rinse the radishes under cold water to clean them. Trim off the greens and roots, then slice them in half, creating a flat surface for roasting.

      Make the Herb Mixture: In a large mixing bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, sea salt, black pepper, and lemon zest. Stir well to form a fragrant herb oil.

        Toss the Radishes: Add the halved radishes into the bowl with the herb mixture. Toss until each radish is well-coated with the oil and seasonings.
