2 cups broccoli florets

2 cups cauliflower florets

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium zucchini, chopped

1 medium carrot, sliced

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and black pepper to taste

1 cup cooked quinoa or rice (for serving)

Fresh parsley, chopped (for garnish)

Optional: Crumbled feta or vegan cheese for topping

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large mixing bowl, combine the broccoli, cauliflower, red and yellow bell peppers, zucchini, and carrot.
