Ingredients

2 lbs chicken wings, separated into flats and drumettes

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 cup unsalted butter, melted

4 cloves garlic, minced

1 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (optional, for garnish)

1 tablespoon lemon juice (optional, for brightness)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire rack on top. This will allow the wings to cook evenly and become crispy.

Prepare the Wings: In a large mixing bowl, pat the chicken wings dry with paper towels to remove excess moisture. This step is crucial for achieving crispy wings. Add baking powder, salt, black pepper, garlic powder, onion powder, and paprika. Toss the wings until they are evenly coated with the spices.

Arrange on Rack: Spread the seasoned wings in a single layer on the wire rack. Make sure there’s space between each wing to ensure they crisp up nicely.

Bake the Wings: Place the wings in the preheated oven and bake for about 40-45 minutes until they are golden brown and crispy. You can flip them halfway through for even cooking, if desired.

Prepare Garlic Parmesan Sauce: While the wings are baking, combine the melted butter and minced garlic in a small saucepan over medium heat. Sauté the garlic for about 2 minutes until fragrant but not browned. Remove from heat and stir in the grated Parmesan cheese and lemon juice (if using).

Coat the Wings: Once the wings are done baking, remove them from the oven and place them in a large bowl. Pour the garlic Parmesan sauce over the warm wings and toss well to ensure each wing is coated thoroughly.

Garnish and Serve: Transfer the wings to a serving platter. Garnish with chopped fresh parsley if desired. Serve immediately with your favorite dipping sauce (like ranch or blue cheese) on the side.
