Garlic Parmesan Crusted Chicken Thighs

4 bone-in, skin-on chicken thighs

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

4 cloves garlic, minced

1 tsp garlic powder

1 tsp onion powder

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

½ tsp paprika

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

2 tbsp unsalted butter, melted

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Crust Mixture: In a mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, minced garlic, garlic powder, onion powder, thyme, paprika, salt, and black pepper. Mix well until all ingredients are evenly distributed.

      Prep the Chicken: Pat the chicken thighs dry with paper towels to ensure the skin gets crispy. Arrange them, skin-side up, on a baking sheet lined with parchment paper.

        Make the Garlic Butter Mixture: In a small bowl, mix the olive oil and melted butter together. Brush the mixture over the skin of each chicken thigh, making sure to coat them generously.

          Coat the Chicken: Press the breadcrumb and Parmesan mixture onto the chicken thighs, ensuring that they are well-covered. The mixture should stick to the olive oil and butter coating.

            Bake: Place the baking sheet in the preheated oven and bake the chicken thighs for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the crust is golden brown and crispy.
