1 cup coarse cornmeal (polenta)

4 cups vegetable broth

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (plus extra for frying)

1 teaspoon garlic powder

1 tablespoon grated Parmesan cheese (optional)

Fresh herbs (like rosemary or thyme) for garnish

Your favorite dipping sauce (e.g., marinara, aioli, or ranch)

Prepare the Polenta: In a medium saucepan, bring the vegetable broth to a boil. Stir in the cornmeal gradually, whisking to prevent lumps. Add salt and pepper. Reduce heat to low and cook, stirring continuously, for about 15-20 minutes, or until the mixture thickens and pulls away from the sides of the pan.

    Add Flavor: Stir in the olive oil, garlic powder, and Parmesan cheese (if using). Mix well until all ingredients are combined and you achieve a smooth consistency.

      Shape the Polenta: Pour the cooked polenta into a greased baking dish, spreading it out evenly to a thickness of about 1 inch. Smooth the top with a spatula. Let it cool at room temperature for at least 30 minutes, then refrigerate for about 1-2 hours until firm.

        Cut into Fries: Once the polenta is set and firm, turn it out onto a cutting board. Carefully slice it into fry shapes (about 1/2-inch wide).
