Ingredients

2 cups mashed potatoes (preferably day-old)

1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)

1/4 cup finely chopped green onions

1/4 cup fresh parsley, chopped (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (panko for extra crunch)

Vegetable oil (for frying)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the mashed potatoes, shredded cheese, green onions, parsley (if using), garlic and onion powders, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Shape the Croquettes: Take a small amount of the potato mixture (about 2 tablespoons) and form it into an oval or round shape. Repeat this process with the remaining mixture, placing the shaped croquettes on a tray.

Crumb Coating: Set up a breading station by placing the flour, beaten eggs, and breadcrumbs in three separate bowls. Dip each croquette in flour, shaking off any excess, then coat it in the beaten egg, and finally roll it in the breadcrumbs, ensuring it's fully covered.

Chill (Optional): For enhanced crunch, you can place the breaded croquettes in the refrigerator for about 30 minutes to firm up.

Fry the Croquettes: In a large, deep skillet, heat about ½ inch of vegetable oil over medium-high heat. Once the oil is hot (test by dropping in a breadcrumb; it should sizzle), carefully add the croquettes in batches. Fry for 3-4 minutes on each side or until golden brown and crispy.

Drain and Serve: Using a slotted spoon, transfer the croquettes to a plate lined with paper towels to absorb excess oil. Serve warm with your favorite dipping sauce, such as aioli or spicy ketchup.
