Golden Parmesan Herb Chicken Noodle Casserole

2 cups cooked rotini pasta

2 cups cooked and shredded chicken breast

1 cup broccoli florets (fresh or frozen)

1 cup sliced mushrooms

1 cup shredded carrots

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Vegetables: In a large skillet over medium heat, add the olive oil. Sauté the minced garlic until fragrant (about 1 minute). Add the broccoli, mushrooms, and shredded carrots. Cook for about 5-7 minutes, or until the vegetables are tender. Season with salt, pepper, thyme, and oregano.

      Combine the Base: In a large mixing bowl, combine the cooked rotini pasta, shredded chicken, sautéed vegetables, cream of chicken soup, chicken broth, and half of the shredded mozzarella cheese. Stir until everything is well incorporated.

        Prepare the Casserole Dish: Lightly grease a 9x13 inch casserole dish. Pour the pasta mixture into the dish and spread it out evenly.

          Add Toppings: Sprinkle the remaining mozzarella cheese over the top of the casserole. Then add the grated Parmesan cheese, distributing it evenly to create a nice golden crust when baked.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once baked, remove the casserole from the oven and let it cool for 5-10 minutes. Garnish with freshly chopped parsley before serving.
