2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko for extra crispiness)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

2 tablespoons olive oil

Fresh parsley (for garnish, optional)

Cooking spray (for baking)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Zucchini: Wash the zucchinis and slice them into thin rounds, about 1/4 inch thick. You may want to use a mandoline slicer for even slices.

      Create the Coating Mixture: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, salt, and black pepper. Mix well to ensure the herbs and spices are evenly distributed.

        Set Up the Egg Wash: In another shallow bowl, beat the eggs and add olive oil to it. Whisk until well combined.

          Coat the Zucchini: Dip each zucchini slice into the egg mixture, allowing any excess to drip off, then coat it in the breadcrumb-Parmesan mixture. Press gently to ensure the breading adheres well.
