2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

½ teaspoon paprika

Salt and pepper to taste

2 large eggs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Zucchini: Wash and dry the zucchinis. Slice them into ¼-inch thick rounds. If desired, you can also slice them into thin strips for a different texture.

      Make the Coating Mixture: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried Italian herbs, paprika, salt, and pepper. Mix well until evenly incorporated.

        Prepare the Egg Wash: In another bowl, beat the eggs until frothy. Add the olive oil and mix until combined.

          Coat the Zucchini: Dip each zucchini slice into the egg wash, ensuring it’s fully coated. Then, transfer it to the breadcrumb mixture, pressing gently to ensure the mixture sticks.
