2 large sweet potatoes

3 tablespoons olive oil

2 tablespoons sesame oil

1 tablespoon sesame seeds (white or black, or a mix)

1 teaspoon sea salt

1 teaspoon garlic powder (optional)

1/2 teaspoon smoked paprika (optional)

Freshly cracked black pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper for easy cleanup.

    Prepare the Sweet Potatoes: Rinse and scrub the sweet potatoes under cold water. Pat them dry with a kitchen towel. Using a sharp knife or a mandoline slicer, cut the sweet potatoes into thin slices (about 1/8 inch thick). The thinner they are, the crisper they will become.

      Toss with Oils and Seasoning: In a large mixing bowl, combine the sweet potato slices with olive oil and sesame oil. Toss well to coat all the pieces evenly. Add the sesame seeds, sea salt, garlic powder, smoked paprika (if using), and black pepper. Toss again until everything is well incorporated.

        Arrange on Baking Sheets: Lay the sweet potato slices in a single layer on the prepared baking sheets, ensuring they are not overlapping. This will help them bake evenly and get crispy.

          Bake: Place the baking sheets in the preheated oven and bake for about 20-25 minutes, flipping the chips halfway through. Keep an eye on them towards the end to avoid burning; they should be golden brown and crisp.
