Ingredients

2 medium zucchinis, sliced into 1/2-inch rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Olive oil spray or extra virgin olive oil

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Zucchini Rounds: Wash the zucchinis and slice them into 1/2-inch thick rounds. Pat them dry with a paper towel to remove excess moisture, which helps achieve a crispier texture.

Set Up Breading Stations: In a small bowl, beat the eggs. In two separate shallow dishes, prepare the breading mixture: one with the grated Parmesan, garlic powder, Italian seasoning, salt, pepper, and red pepper flakes; and the other with the breadcrumbs.

Bread the Zucchini Rounds: Dip each zucchini slice into the beaten eggs, ensuring it's fully coated. Allow any excess egg to drip off. Then, roll it in the Parmesan mixture until fully covered. Transfer the slice to the breadcrumb dish and coat evenly, pressing gently to ensure the coating sticks.

Arrange on Baking Sheet: Place the breaded zucchini bites onto the prepared baking sheet in a single layer, leaving space between each bite for even cooking.

Spray with Olive Oil: Lightly spray the tops of the zucchini bites with olive oil to enhance browning or drizzle a small amount of extra virgin olive oil over them.

Bake to Perfection: Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, flipping halfway through the cooking time for even crispness.

Garnish and Serve: Remove from the oven, sprinkle with fresh parsley, and let them cool slightly. Serve warm as a delicious appetizer or snack with marinara sauce or your favorite dipping sauce on the side.
