Ingredients

For the Chicken Marinade:

500g chicken breast, cut into bite-sized pieces

200g plain yogurt

1 tablespoon lemon juice

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon garam masala

1 teaspoon chili powder

Salt and pepper, to taste

For the Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

4 garlic cloves, minced

1 tablespoon fresh ginger, minced

1 green chili, finely chopped (optional for heat)

2 teaspoons ground coriander

2 teaspoons ground cumin

1 teaspoon garam masala

1 teaspoon turmeric powder

400g canned tomatoes, crushed

200ml coconut milk or heavy cream

Fresh cilantro, for garnish

Salt, to taste

Cooked basmati rice or naan, for serving

Instructions

Marinate the Chicken: In a large bowl, combine the yogurt, lemon juice, ground cumin, ground coriander, garam masala, chili powder, salt, and pepper. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Sauce: In a large saucepan or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden and translucent, about 5-7 minutes.

Add Aromatics: Stir in the minced garlic, ginger, and green chili (if using) and sauté for another 1-2 minutes until fragrant.

Spice It Up: Add the ground coriander, ground cumin, garam masala, and turmeric powder. Cook for a minute to toast the spices.

Tomato Base: Pour in the crushed tomatoes and season with salt. Stir well to combine. Let the sauce simmer for about 10 minutes, allowing flavors to meld and the sauce to thicken slightly.

Cook the Chicken: While the sauce is simmering, heat a grill pan or regular skillet over medium-high heat. Add the marinated chicken (discard any excess marinade) and cook for about 5-7 minutes, turning until well browned and cooked through.

Combine Chicken and Sauce: Add the cooked chicken to the simmering sauce. Stir in the coconut milk or heavy cream, adjusting salt to taste. Simmer for an additional 5-10 minutes until everything is well combined and heated through.

Garnish and Serve: Serve hot, garnished with fresh cilantro. Pair with basmati rice or naan to soak up all the delicious sauce.
