Grilled BBQ Chicken Quesadillas

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 small red onion, thinly sliced

1 cup corn (fresh, frozen, or canned)

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil or cooking spray for grilling

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Prepare the Chicken: In a large bowl, combine the shredded chicken with BBQ sauce, cumin, smoked paprika, salt, and pepper. Toss until the chicken is well coated.

    Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle a quarter of both the cheddar and Monterey Jack cheeses over one half of the tortilla. Top with a quarter of the BBQ chicken mixture, some red onion slices, and corn. Fold the tortilla over to create a semi-circle. Repeat with remaining tortillas.

      Preheat the Grill: Heat your grill or grill pan over medium heat. Lightly coat the grill with olive oil or cooking spray to prevent sticking.

        Grill the Quesadillas: Place the folded quesadillas on the grill. Cook for about 4-5 minutes on one side, until the tortilla is golden and crispy. Carefully flip the quesadilla and grill for another 3-4 minutes on the other side, until the cheese is melted and the tortilla is beautifully charred.

          Slice and Serve: Once cooked, remove the quesadillas from the grill and let them sit for a minute. Then, slice them into wedges. Garnish with fresh cilantro and serve with sour cream and salsa on the side.
