Grilled Chicken with Fresh Mango Chutney

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons lime juice

2 teaspoons cumin

1 teaspoon paprika

2 cloves garlic, minced

Salt and pepper to taste

For the Fresh Mango Chutney:

2 ripe mangoes, peeled and diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (adjust for spice)

1/4 cup cilantro, chopped

Juice of 1 lime

2 tablespoons honey

Salt to taste

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, lime juice, cumin, paprika, minced garlic, salt, and pepper.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to meld.

      Make the Mango Chutney: In a separate bowl, combine the diced mangoes, chopped red onion, red bell pepper, minced jalapeño, cilantro, lime juice, honey, and salt. Mix well and let it sit for at least 15 minutes to allow the flavors to develop.
