2 ears of corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 cup cherry tomatoes, halved

1 jalapeño pepper, seeded and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill and cook for about 10-12 minutes, turning occasionally, until charred and tender. Once done, remove from the grill and let it cool.

    Cut the Corn Off the Cob: Once the corn is cool enough to handle, use a sharp knife to cut the kernels off the cob into a large mixing bowl.
