Grilled Eggplant Pesto Wraps

Ingredients
  

2 medium-sized eggplants, sliced into 1/2-inch rounds

1/4 cup olive oil

Salt and pepper, to taste

4 large whole wheat tortillas or wraps

1 cup fresh basil pesto (store-bought or homemade)

1 cup fresh spinach leaves

1 cup roasted red peppers, sliced

1 cup crumbled feta cheese or vegan feta

1 tablespoon balsamic glaze (optional, for drizzling)

Fresh basil leaves, for garnish

Instructions
 

Prepare the Eggplant:

    - Preheat your grill (or grill pan) to medium-high heat.

      - Brush the eggplant slices with olive oil and season with salt and pepper on both sides.

        Grill the Eggplant:

          - Place the eggplant slices on the grill and cook for about 4-5 minutes per side, or until they have nice grill marks and are tender. Remove from grill and set aside.

            Assemble the Wraps:

              - Lay a tortilla flat on a clean surface. Spread a generous layer of basil pesto over the entire surface of the tortilla.

                - Layer with fresh spinach leaves, grilled eggplant slices, roasted red peppers, and crumbled feta cheese.

                  Wrap it Up:

                    - Carefully fold in the sides of the tortilla and then roll it tightly from the bottom to the top to form a wrap.

                      - Repeat this process for the remaining tortillas.

                        Serve:

                          - Slice the wraps in half diagonally and arrange them on a serving platter. Drizzle with balsamic glaze if desired, and garnish with fresh basil leaves.
