Grilled Garlic Butter Steak Bites

1 lb (450g) sirloin or ribeye steak, cut into 1-inch cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

1 tablespoon olive oil

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Marinate the Steak: In a large bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper. Add the steak cubes and toss until well coated. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Prepare the Grill: Preheat your grill to medium-high heat. If you are using wooden skewers, soak them in water for 30 minutes to prevent burning.

      Make Garlic Butter: In a small saucepan over low heat, melt 2 tablespoons of butter. Add the remaining minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat and set aside.

        Skewer the Steak: If using skewers, thread the marinated steak cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

          Grill the Steak Bites: Place the skewers on the grill and cook for about 3-4 minutes on each side for medium-rare (or longer if desired). Brush the steak bites with the garlic butter during the last minute of grilling for added flavor.

            Rest and Serve: Once cooked to your liking, remove the steak bites from the grill. Allow them to rest for 5 minutes. Drizzle the remaining garlic butter over the steak bites and garnish with fresh parsley.
