Grilled Peach & Burrata Salad

4 ripe peaches, halved and pitted

8 ounces burrata cheese

4 cups arugula (or baby spinach)

1/4 cup balsamic glaze

1/4 cup extra virgin olive oil

1/4 cup toasted pecans or walnuts, roughly chopped

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat the Grill: Heat your grill to medium-high (approximately 400°F or 200°C).

    Grill the Peaches: Brush the cut sides of the peach halves with a little olive oil. Place them cut-side down on the grill. Grill for about 4-5 minutes, or until grill marks form and peaches are slightly softened. Remove from grill and let cool slightly before cutting into wedges.

      Prepare the Salad Base: In a large bowl, toss the arugula with the remaining olive oil, a pinch of salt, and pepper until lightly coated.

        Assemble the Salad: On a large platter or individual plates, lay out the arugula as a base. Top with the grilled peach wedges and tear the burrata cheese into pieces, placing it around the salad.
