Grilled Peach Chicken Salad

Ingredients
  

2 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

6 cups mixed salad greens (arugula, spinach, and kale work beautifully)

1/2 cup crumbled feta cheese

1/4 cup sliced almonds, toasted

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinaigrette dressing

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, mix together 2 tablespoons of olive oil, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for about 30 minutes to absorb the flavors.

      Grill the Chicken:

        - Preheat the grill to medium-high heat. Place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.

          Grill the Peaches:

            - While the chicken rests, place the peach halves cut-side down on the grill. Grill for about 3-4 minutes until grill marks appear and the peaches are slightly softened. Remove from the grill and allow them to cool slightly before slicing into wedges.

              Prepare the Salad:

                - In a large bowl, combine the mixed salad greens, sliced grilled peaches, sliced red onion, and toasted almonds. Toss gently to combine.

                  Add Chicken and Dressing:
