Grilled Peach Chicken with Balsamic Drizzle

4 boneless, skinless chicken breasts

2 large ripe peaches, halved and pitted

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional for heat)

Fresh basil leaves, for garnish

For the Balsamic Drizzle:

1 cup balsamic vinegar

2 tablespoons honey

1 teaspoon Dijon mustard

Salt and pepper, to taste

Marinate the Chicken: In a mixing bowl, combine the olive oil, salt, pepper, smoked paprika, garlic powder, and crushed red pepper flakes (if using). Add the chicken breasts and toss to coat. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for enhanced flavor.

    Prepare Balsamic Drizzle: In a small saucepan over medium heat, combine balsamic vinegar, honey, and Dijon mustard. Bring to a simmer, then reduce heat to low and allow it to cook for about 10-15 minutes, stirring occasionally, until the mixture is thick enough to coat the back of a spoon. Season with salt and pepper to taste. Set aside to cool.

      Preheat the Grill: Preheat your grill to medium-high heat.

        Grill the Chicken: Remove chicken from marinade and place on the grill. Cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C) and is nicely charred.

          Grill Peaches: While the chicken is nearly done, place the peach halves cut-side down on the grill. Grill for about 4-5 minutes until grill marks appear and they are slightly softened.
