Grilled Shrimp Cobb Salad

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp salt

½ tsp black pepper

6 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup blue cheese, crumbled

4 slices cooked bacon, crumbled

2 hard-boiled eggs, sliced

¼ cup red onion, thinly sliced

¼ cup balsamic vinaigrette

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the shrimp, olive oil, minced garlic, smoked paprika, salt, and black pepper. Toss until the shrimp are well-coated. Let them marinate for about 15 minutes.

    Preheat the Grill: While the shrimp marinate, preheat your grill or grill pan over medium-high heat. If using an outdoor grill, ensure the grates are clean and oiled to prevent sticking.
