Ingredients

For the Shrimp Marinade:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons fresh lime juice

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

2 tablespoons fresh cilantro, chopped

For the Tacos:

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

1 jalapeño, sliced (optional for heat)

Fresh lime wedges for serving

For the Creamy Cilantro Sauce:

½ cup Greek yogurt or sour cream

¼ cup fresh cilantro, chopped

1 tablespoon lime juice

1 clove garlic, minced

Salt and pepper to taste

Instructions

Marinate the Shrimp: In a mixing bowl, whisk together olive oil, lime juice, smoked paprika, ground cumin, garlic powder, sea salt, black pepper, and cayenne pepper. Add the shrimp to the marinade and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Creamy Cilantro Sauce: In another small bowl, combine Greek yogurt (or sour cream), chopped cilantro, lime juice, minced garlic, salt, and pepper. Mix well until smooth and set aside.

Grill the Shrimp: Preheat your grill or grill pan over medium-high heat. Once hot, thread shrimp onto skewers, if desired, for easy handling. Grill shrimp for about 2-3 minutes on each side, or until they are pink, opaque, and cooked through.

Warm the Tortillas: While the shrimp are grilling, warm the corn tortillas on the grill for about 20-30 seconds on each side until they are pliable and have grill marks.

Assemble the Tacos: Evenly distribute the grilled shrimp among the tortillas. Top each taco with shredded red cabbage, avocado slices, cherry tomatoes, red onion, and jalapeño slices as desired.

Drizzle the Sauce: Generously drizzle the creamy cilantro sauce over the tacos.

Serve: Serve immediately with lime wedges on the side for squeezing over the top.
