Grilled Shrimp with Pineapple Salsa

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Skewers (if using wooden skewers, soak in water for 30 minutes)

For the Pineapple Salsa:

1 cup fresh pineapple, finely diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 small jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

Marinate the Shrimp: In a large bowl, whisk together olive oil, lime juice, minced garlic, smoked paprika, cumin, salt, and pepper. Add the shrimp to the bowl, ensuring each one is well coated. Cover and marinate in the refrigerator for at least 30 minutes to 1 hour.

    Prepare the Pineapple Salsa: In a separate bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix well and let it sit at room temperature for flavors to meld while you prepare the shrimp.

      Preheat the Grill: Preheat your grill to medium-high heat. If you're using a grill pan, heat it on the stove over medium-high heat and lightly oil the surface.

        Skewer the Shrimp: If using skewers, thread the marinated shrimp onto them, about 4 to 5 shrimp per skewer. If grilling directly, you can place the shrimp directly on the grill grates.

          Grill the Shrimp: Place the skewered shrimp on the grill and cook for 2-3 minutes on each side, or until they turn pink and opaque. If grilling directly, cook for the same time, flipping halfway through.
