1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

1 cup mushrooms, sliced

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried oregano

4 slices of whole-grain bread

1 cup hummus (store-bought or homemade)

Fresh spinach leaves

½ cup feta cheese, crumbled (optional)

Balsamic glaze for drizzling (optional)

Marinate the Vegetables: In a large bowl, combine zucchini, bell peppers, mushrooms, olive oil, salt, pepper, oregano, and garlic powder. Toss until the vegetables are well-coated with the marinade. Let them sit for about 15-20 minutes to absorb the flavors.
