Ingredients

4 cups seedless watermelon, cut into 1-inch cubes

1 cup feta cheese, crumbled

12 fresh mint leaves

2 tablespoons balsamic glaze

1 tablespoon olive oil

Salt and pepper to taste

12 wooden or metal skewers

Instructions

Soak Skewers (if wooden): If you're using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

Prepare the Watermelon and Feta: On a clean cutting board, cut the watermelon into 1-inch cubes and crumble the feta cheese.

Assemble the Skewers: Take a skewer and thread a piece of watermelon, followed by a mint leaf, and then a piece of feta. Repeat this pattern until the skewer is filled, leaving a little space at each end for handling. Aim for about 3-4 pieces of each ingredient per skewer.

Seasoning: Brush the assembled skewers lightly with olive oil and sprinkle with salt and pepper to taste.

Preheat the Grill: Preheat your grill or grill pan over medium-high heat.

Grill the Skewers: Place the skewers on the grill and cook for about 2-3 minutes on each side, just until grill marks appear and the watermelon slightly caramelizes.

Drizzle with Balsamic: Remove the skewers from the grill and drizzle with balsamic glaze while hot.

Serve: Arrange the skewers on a serving platter, garnish with extra mint leaves if desired, and serve immediately for a refreshing appetizer or side.
