Grilled Zucchini Feta Foldovers

2 medium zucchinis, sliced lengthwise

1 cup crumbled feta cheese

½ cup fresh cherry tomatoes, halved

¼ cup Kalamata olives, pitted and chopped

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)

1 tablespoon olive oil

Salt and pepper, to taste

4 large whole wheat or regular pita breads

1 tablespoon balsamic glaze (optional, for drizzling)

Fresh basil leaves, for garnish

Prepare the Grill: Preheat your grill to medium heat. If using a grill pan, lightly oil it and place it over medium heat on the stovetop.

    Season the Zucchini: In a bowl, toss the zucchini slices with olive oil, salt, and pepper. This will enhance their flavor and prevent them from sticking to the grill.

      Grill the Zucchini: Place the zucchini slices on the grill, cooking until they are tender and have nice grill marks, about 3-4 minutes per side. Remove them from the grill and set aside to cool slightly.

        Mix the Filling: In a mixing bowl, combine the grilled zucchini, feta cheese, cherry tomatoes, Kalamata olives, and oregano. Stir gently to combine, being careful not to break up the feta too much.

          Assemble the Foldovers: Take a pita bread and carefully open it to create a pocket. Stuff each pita with about ¼ of the filling mixture, ensuring an even distribution.

            Toast the Foldovers: Place the filled pitas back on the grill. Grill for about 2-3 minutes on each side, or until the pita is warm and slightly crispy.
