2 ripe bananas

1 cup rolled oats

½ cup almond flour

¼ cup maple syrup (or honey)

1 tsp vanilla extract

½ tsp baking soda

½ tsp cinnamon

¼ cup dark chocolate chips (optional)

Pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a mixing bowl, mash the ripe bananas with a fork until smooth.

      Add the rolled oats, almond flour, maple syrup, vanilla extract, baking soda, cinnamon, and salt to the mashed bananas. Stir until all ingredients are well combined.

        If using, fold in the dark chocolate chips until evenly distributed throughout the cookie dough.

          Using a tablespoon or cookie scoop, drop dollops of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dollop slightly with the back of the spoon.

            Bake for 15-20 minutes, or until the cookies are lightly golden around the edges.

              Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
