4 tablespoons almond flour

2 tablespoons unsweetened cocoa powder

1 tablespoon coconut sugar (or sweetener of choice)

1/4 teaspoon baking powder

Pinch of salt

1 tablespoon unsweetened applesauce

2 tablespoons milk of choice (almond, oat, or cow's milk)

1/4 teaspoon vanilla extract

Optional: 1 tablespoon dark chocolate chips (at least 70% cocoa for lower sugar)

Mix Dry Ingredients: In a microwave-safe mug (roughly 12 oz), combine almond flour, cocoa powder, coconut sugar, baking powder, and salt. Stir well until all dry ingredients are evenly mixed.

    Add Wet Ingredients: To the same mug, add the unsweetened applesauce, milk, and vanilla extract. Mix thoroughly until the batter is smooth and there are no lumps. You can add the optional dark chocolate chips at this stage, folding them gently into the batter.

      Microwave: Place the mug in the microwave and cook on high for about 1 minute to 1 minute and 15 seconds. (The cooking time may vary depending on your microwave's wattage, so start checking at the 1-minute mark. The cake should be firm to the touch but still soft in the center.)

        Cool & Serve: Once cooked, remove the mug from the microwave (it will be hot!), and allow it to cool for a minute or two. Enjoy it straight from the mug or invert it onto a plate for a more elegant presentation.
