For the Chicken:

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup diced roasted hatch chilies (fresh or canned)

For the Nacho Toppings:

2 cups tortilla chips

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1 medium avocado, diced

1 cup diced tomatoes

½ cup sliced jalapeños (pickled or fresh)

½ cup sour cream

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken:

    - Preheat your grill or stovetop grill pan over medium-high heat.

      - In a bowl, toss the chicken breasts with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.

        - Grill the chicken for about 6-7 minutes per side or until cooked through (internal temperature should reach 165°F).

          - Remove from heat, let it rest for 5 minutes, then dice into bite-sized pieces.

            Build the Nacho Mixture:

              - In a large bowl, combine the grilled chicken, roasted hatch chilies, and a sprinkle of salt and pepper. Stir gently until well mixed.

                Assemble the Tacos:

                  - Preheat your oven to 350°F (175°C).
