Ingredients
  

1 pound ground beef or turkey

1 can (4 ounces) diced Hatch green chiles (drained)

1 small onion, finely chopped

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper to taste

12 small flour tortillas (or mini taco cups)

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 cup diced tomatoes

½ cup sour cream or Greek yogurt

1 avocado, diced

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Add the ground beef (or turkey), breaking it up with a spatula. Cook until browned and no longer pink, about 6-8 minutes.

      Add Seasonings: Once the meat is cooked, drain any excess fat. Stir in the Hatch green chiles, garlic powder, cumin, chili powder, salt, and pepper. Mix well and let it cook for another 2-3 minutes to allow the flavors to meld. Remove from heat.

        Prepare Taco Cups: Lightly grease a muffin tin with cooking spray. Take each tortilla and gently press it into the muffin tin to form a cup shape. If using smaller tortillas, you may fold them into quarters and arrange them accordingly.

          Fill the Cups: Spoon a generous amount of the chili mixture into each tortilla cup, filling them about 3/4 full. Top each filled cup with a sprinkle of cheddar cheese.

            Bake the Cups: Place the muffin tin in the preheated oven and bake for 10-12 minutes, or until the tortillas are crispy and the cheese is melted and bubbly.

              Garnish and Serve: Carefully remove the taco cups from the muffin tin. Once slightly cooled, top each cup with shredded lettuce, diced tomatoes, avocado, and a dollop of sour cream or Greek yogurt. Garnish with fresh cilantro if desired.
