Healthy Apple Cinnamon Muffins

1 ½ cups whole wheat flour

1 cup rolled oats

½ cup brown sugar (or coconut sugar)

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

2 large eggs

½ cup unsweetened applesauce

¼ cup Greek yogurt (or plant-based yogurt)

¼ cup honey or maple syrup

1 tsp vanilla extract

1 large apple, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

Optional: ¼ cup chopped walnuts or pecans (for added crunch)

Optional: a sprinkle of cinnamon sugar for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Combine Dry Ingredients: In a large bowl, whisk together the whole wheat flour, rolled oats, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

      Mix Wet Ingredients: In another bowl, beat the eggs, then add the applesauce, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

        Combine Mixtures: Gradually add the wet mixture to the dry mixture. Stir just until combined. Do not overmix! Gently fold in the diced apple and nuts (if using).

          Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full. If desired, sprinkle a little cinnamon sugar on top of each muffin.

            Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

              Cool & Enjoy: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
