2 cups rolled oats

1 medium apple, cored and grated (preferably a sweet variety like Fuji or Honeycrisp)

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or almonds work well)

1/4 cup dried fruit (raisins or cranberries)

1/2 teaspoon vanilla extract

1/4 cup almond butter (optional for added creaminess)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper, or lightly grease it to prevent sticking.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, and salt. Stir the mixture to distribute the cinnamon evenly.

      Incorporate Wet Ingredients: In a separate bowl, mix the grated apple, applesauce, honey (or maple syrup), vanilla extract, and almond butter (if using). Whisk until well combined.

        Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients. Mix until the oats are fully coated and the mixture is sticky.

          Add Nuts and Dried Fruit: Fold in the chopped nuts and dried fruit using a spatula or wooden spoon until evenly distributed throughout the mixture.

            Shape the Bites: Use your hands (or a small cookie scoop) to form the mixture into bite-sized balls, about 1-2 inches in diameter. Place each ball on the prepared baking sheet, leaving a little space between each for even baking.
