Ingredients

1 cup rolled oats

1 cup Greek yogurt (unsweetened)

2 ripe bananas, mashed

2 large eggs

1/4 cup honey or maple syrup

1 scoop vanilla protein powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 cup fresh or frozen blueberries

Optional: 1/4 cup chopped nuts (such as walnuts or pecans)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

Mix Dry Ingredients: In a medium bowl, combine the rolled oats, protein powder, baking powder, baking soda, salt, and ground cinnamon. Stir well to ensure all dry ingredients are evenly mixed.

Combine Wet Ingredients: In a large bowl, whisk together the Greek yogurt, mashed bananas, eggs, and honey or maple syrup until smooth and well-combined.

Incorporate Dry into Wet: Gradually add the dry ingredient mixture into the wet mixture. Stir until just combined; be careful not to overmix.

Add Blueberries: Gently fold in the blueberries and nuts (if using) into the batter, ensuring they are evenly distributed without breaking them apart.

Fill Muffin Cups: Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

Cool Down: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

Serve: Once cooled, serve as a nutritious breakfast or snack. These muffins can be stored in an airtight container in the fridge for up to a week or frozen for longer storage.
