Healthy Chili Egg Bakes

6 large eggs

1 cup cooked black beans, rinsed and drained

1 cup diced bell peppers (red, yellow, or green)

1 cup corn (frozen or fresh)

1 cup cherry tomatoes, halved

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

¼ cup shredded cheddar cheese (optional)

Fresh cilantro, for garnish

Cooking spray or olive oil, for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or a light coat of olive oil to prevent sticking.

    Mix the Eggs: In a large mixing bowl, crack the eggs and whisk them together until well combined.

      Add the Veggies: Stir in the black beans, diced bell peppers, corn, and halved cherry tomatoes.

        Season: Sprinkle in the ground cumin, smoked paprika, chili powder, and season with salt and pepper to taste. Mix everything well until the ingredients are evenly distributed.

          Fill the Muffin Tin: Pour the egg and veggie mixture evenly into the greased muffin tin cups, filling each cup about 3/4 full.

            Cheese Top (Optional): If desired, sprinkle a small amount of shredded cheddar cheese on top of each cup for added flavor.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg is set and slightly golden on top.

                Cool and Garnish: Once baked, remove from the oven and allow to cool for a few minutes. Use a knife to gently loosen the edges, then pop them out of the muffin tin. Garnish with fresh cilantro before serving.
