1 cup Medjool dates, pitted

1 cup raw almonds (or any nut of your choice)

¼ cup unsweetened cocoa powder

½ tsp vanilla extract

A pinch of sea salt

1 cup shredded unsweetened coconut

2 tbsp chia seeds (optional, for added nutrition)

2-4 tbsp water (as needed)

Instructions
 

Prepare the Nuts: In a food processor, add the raw almonds and pulse for about 10-15 seconds until they are finely chopped. Take care not to over-process them into almond butter.

    Blend Dates: Add the pitted Medjool dates, cocoa powder, vanilla extract, and sea salt to the food processor. Blend until the mixture becomes sticky and starts to clump together. If it's too dry, add a tablespoon of water at a time until you achieve the desired consistency.

      Incorporate Coconut: Once the mixture is well-combined, add the chia seeds (if using) and half of the shredded coconut. Pulse again until everything is evenly mixed.

        Form the Balls: Using your hands, take about a tablespoon of the mixture and roll it into a ball shape. Repeat the process until all the mixture is formed into balls.

          Coat the Balls: Roll each ball in the remaining shredded coconut until well-coated. This will add a delightful texture and flavor.

            Chill: Place the chocolate date balls onto a tray and refrigerate for at least 30 minutes to firm up.
