Ingredients

1 ripe banana, mashed

1 cup pumpkin puree (canned or homemade)

1/3 cup honey or maple syrup

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 cup whole wheat flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips or raisins (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed banana, pumpkin puree, honey (or maple syrup), applesauce, and vanilla extract. Stir until well combined and smooth.

Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt until evenly mixed.

Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to over-mix. If desired, fold in the chopped nuts and chocolate chips or raisins.

Pour Batter: Pour the batter into the prepared baking pan and spread it evenly with a spatula.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Once baked, remove from the oven and allow the bars to cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.

Slice and Serve: Once cool, slice into squares or bars. Enjoy these delicious and healthy treats with your family or friends!
