3 cups vegetable broth

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 cup barbecue sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

Salt and pepper to taste

4 whole wheat hamburger buns

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Lentils: In a medium-sized pot, combine the rinsed lentils and vegetable broth. Bring to a boil, reduce heat, and simmer uncovered for about 20-25 minutes or until the lentils are tender. Drain any excess liquid if necessary and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it turns translucent. Stir in the minced garlic and cook for an additional minute, until fragrant.

      Add Bell Pepper and Spices: Add the diced bell pepper to the skillet and cook for another 3-4 minutes until softened. Sprinkle in the smoked paprika, cumin, and chili powder, stirring to combine.

        Combine Lentils and Seasoning: Add the cooked lentils to the skillet with the sautéed vegetables. Pour in the barbecue sauce and apple cider vinegar, mix well to combine all ingredients.
