1.5 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

4 medium carrots, sliced

2 celery stalks, chopped

3 medium potatoes, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes with juice

6 cups beef broth

2 teaspoons Worcestershire sauce

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the browned beef and set aside.

    Sauté Vegetables: In the same pot, add the chopped onions and garlic. Sauté for about 2-3 minutes until the onions are translucent.

      Add More Veggies: Stir in the carrots, celery, and potatoes. Cook for an additional 5 minutes, stirring occasionally until they start to soften.

        Combine Ingredients: Return the browned beef to the pot. Add the green beans, diced tomatoes (with juice), beef broth, Worcestershire sauce, thyme, bay leaf, salt, and pepper.

          Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender and the flavors meld beautifully, stirring occasionally.

            Adjust Seasoning: Taste the soup and adjust seasoning with additional salt and pepper if needed. Remove the bay leaf before serving.
