1 lb ground beef (80% lean)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 cup diced tomatoes (canned or fresh)

1 cup onion, finely chopped

2 cloves garlic, minced

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper

1 cup beef broth

2 cups shredded cheddar cheese

1 cup crushed tortilla chips (for topping)

1/4 cup fresh cilantro, chopped (for garnish, optional)

1 avocado, diced (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat.

      Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the beef. Sauté for 3-4 minutes until the onion is translucent.

        Combine Ingredients: Stir in the kidney beans, black beans, corn, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Pour in the beef broth and mix thoroughly.

          Simmer the Mixture: Reduce heat to low and let the mixture simmer for about 10 minutes, allowing the flavors to meld together.

            Transfer to Baking Dish: Pour the beef and bean mixture into a large baking dish (approximately 9x13 inches). Spread it out evenly.

              Add Cheese & Tortilla Chips: Sprinkle the shredded cheddar cheese over the top, followed by a layer of crushed tortilla chips for that crunchy texture.

                Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes or until the cheese is bubbling and the edges are slightly golden.

                  Garnish and Serve: Remove from the oven and let it cool for a couple of minutes. Garnish with chopped cilantro and diced avocado if desired. Serve warm.
