Hearty Tuscan Kale Bean Stew

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 can (14 oz) diced tomatoes, with juice

4 cups vegetable broth

1 can (15 oz) white beans, drained and rinsed (cannellini or great northern)

4 cups Tuscan kale, stems removed and leaves chopped

Salt and pepper, to taste

1 tablespoon balsamic vinegar

2 tablespoons fresh parsley, chopped, for garnish

Optional: Grated Parmesan cheese for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.

    Stir in the minced garlic, diced carrots, and celery. Cook for an additional 3-4 minutes until the vegetables start to soften.

      Add the dried thyme, oregano, and smoked paprika to the pot, stirring to coat the vegetables.

        Pour in the diced tomatoes with their juices and the vegetable broth. Bring the mixture to a gentle boil.

          Reduce the heat to low, then add the white beans and chopped Tuscan kale. Stir to combine and simmer for 15-20 minutes, allowing the flavors to meld and the kale to wilt.

            Season the stew with salt, pepper, and balsamic vinegar. Taste and adjust seasoning if necessary.

              Serve the stew hot, garnished with fresh parsley. For an extra touch, top with grated Parmesan cheese if desired.
