2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 stalks celery, chopped

1 medium potato, diced

1 zucchini, diced

1 red bell pepper, chopped

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes, with juice

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon smoked paprika

Salt and pepper, to taste

1 cup fresh spinach or kale

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.

    Stir in the minced garlic, and cook for another minute until fragrant.

      Add the sliced carrots and chopped celery to the pot, and cook for an additional 5 minutes, stirring occasionally.

        Incorporate the diced potato, zucchini, red bell pepper, and green beans. Mix well and cook for another 5 minutes.

          Pour in the diced tomatoes with their juice and vegetable broth. Stir to combine.

            Season the soup with thyme, oregano, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 25 minutes, allowing the vegetables to soften and the flavors to meld.

              Just before serving, stir in the fresh spinach or kale until wilted and tender.

                Ladle the soup into bowls and garnish with chopped fresh parsley. Serve hot with crusty bread for a cozy meal.
