For the Veggie Layers:

2 medium zucchinis, sliced into thin rounds

1 small eggplant, diced

1 red bell pepper, diced

1 cup mushrooms, sliced

1 cup spinach, roughly chopped

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried oregano

1 teaspoon dried basil

For the Cheese Mixture:

15 oz ricotta cheese

1 egg

2 cups shredded mozzarella cheese (divided)

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

For the Sauce:

4 cups marinara sauce (homemade or store-bought)

1 teaspoon red pepper flakes (optional, for spice)

For Assembly:

9-12 lasagna noodles (no-boil or regular)

Fresh basil leaves for garnish

Prepare the Veggies: In a large skillet over medium heat, add olive oil. Once hot, sauté the garlic until fragrant (about 1 minute). Add the zucchinis, eggplant, bell pepper, and mushrooms. Cook until softened (about 5-7 minutes). Stir in the spinach until wilted, then season with salt, pepper, oregano, and basil. Remove from heat.

    Make the Cheese Mixture: In a bowl, combine the ricotta cheese, egg, 1 cup of mozzarella, and Italian seasoning. Mix until well combined.

      Prepare the Sauce: If using store-bought marinara, heat it gently in a saucepan. If you're making your own, simmer tomatoes, garlic, and Italian herbs for about 20 minutes to blend the flavors.

        Assemble the Lasagna:

          - Preheat your oven to 375°F (190°C).

            - In a 9x13 inch baking dish, spread a thin layer of marinara sauce at the bottom.

              - Place a layer of lasagna noodles over the sauce, followed by half of the cheese mixture, half of the sautéed veggie mixture, and a third of the marinara sauce.

                - Add another layer of noodles, followed by the remaining cheese mixture, remaining veggies, and half of the remaining sauce.

                  - Finish with a final layer of noodles topped with the rest of the marinara sauce and the remaining mozzarella and Parmesan cheese.

                    Bake: Cover the dish with aluminum foil (to prevent sticking, spray foil with cooking spray). Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown. Let it cool for 10 minutes before slicing.
