Herbed Lemon Couscous Bowls

1 cup couscous

1 ¼ cups vegetable broth or water

2 tablespoons olive oil

Juice and zest of 1 large lemon

1 teaspoon garlic powder

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 cup cherry tomatoes, halved

1 cucumber, diced

½ cup red onion, finely chopped

1 cup fresh parsley, chopped

½ cup feta cheese, crumbled

Optional: ¼ cup Kalamata olives, pitted and halved

Instructions
 

Prepare the Couscous: In a medium saucepan, bring vegetable broth (or water) to a boil. Add couscous, cover, and remove from heat. Let it sit for about 5 minutes until the liquid is absorbed. Fluff with a fork.

    Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and black pepper. Set aside.
