Ingredients

4 cups seedless watermelon, cubed and chill

1/3 cup granulated sugar (adjust based on sweetness of watermelon)

2 tablespoons fresh lime juice (about 1 lime)

1 teaspoon vanilla extract (optional)

Pinch of salt

Instructions

Prep the Watermelon: Begin by cutting the watermelon into cubes. Remove any seeds if necessary. Spread the watermelon cubes in a single layer on a baking sheet and freeze for at least 2 hours, or until completely frozen.

Blend Ingredients: Once the watermelon is frozen, add it to a high-speed blender or food processor. Add the granulated sugar, fresh lime juice, vanilla extract (if using), and a pinch of salt.

Blend Until Smooth: Pulse the mixture until smooth and creamy. This may take a minute or two, so be patient! If the blend is too thick, you can add a tablespoon of water or more lime juice to help it along.

Taste and Adjust: Stop the blender and taste the sorbet. Adjust sweetness by adding more sugar if necessary, and blend again briefly to incorporate.

Chill the Mixture: Transfer the blended mixture to a freezer-safe container. Seal tightly and freeze for an additional 2-3 hours for the flavors to meld and the consistency to firm up.

Serve: When ready to serve, scoop the watermelon sorbet into bowls or cones. Optionally, garnish with fresh mint leaves or a lime wedge for added flair.

Enjoy: Relish this refreshing watermelon sorbet on a hot day or as a delightful dessert!
