Ingredients

For the Meatballs:

1 lb ground beef (preferably 80/20 for juiciness)

½ cup breadcrumbs (preferably Italian seasoned)

¼ cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tbsp chopped fresh parsley (or 1 tsp dried)

1 tsp onion powder

1 tsp salt

½ tsp black pepper

½ tsp dried oregano

½ tsp crushed red pepper flakes (optional, for heat)

For the Tomato Sauce:

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 tsp sugar (to balance acidity)

1 tsp salt

½ tsp black pepper

1 tsp dried basil

1 tsp dried oregano

½ cup fresh basil leaves, chopped (for garnish)

Instructions

Make the Meatballs:

    - In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, parsley, onion powder, salt, pepper, oregano, and red pepper flakes (if using).

      - Mix everything gently until just combined; avoid overmixing to keep the meatballs tender.

        - Shape the mixture into 1-inch meatballs and set aside on a baking sheet lined with parchment paper.

          Cook the Meatballs:

            - In a large skillet, heat a tablespoon of olive oil over medium heat.

              - Add the meatballs in batches, cooking until browned on all sides (about 5-7 minutes). Remove and set aside on a plate. They don’t need to be fully cooked through at this point.

                Prepare the Tomato Sauce:

                  - In the same skillet, add another tablespoon of olive oil. Toss in the chopped onion and sauté until translucent (about 4-5 minutes).

                    - Add minced garlic and cook for an additional minute until fragrant.

                      - Pour in the crushed tomatoes, stir in the sugar, salt, pepper, basil, and oregano. Bring to a gentle simmer.

                        Combine Mechanically:

                          - Return the browned meatballs to the skillet, ensuring they're coated with the tomato sauce.

                            - Cover and let simmer on low heat for about 20-25 minutes, allowing the flavors to meld and the meatballs to cook through.

                              Serve:

                                - Serve the meatballs hot over pasta, in a sub, or on their own, garnished with fresh chopped basil and an extra sprinkle of Parmesan if desired. Enjoy the heartwarming flavors!
