2 cups cooked chicken, shredded

1 cup frozen peas and carrots

1 cup diced potatoes (cooked)

1/2 cup corn (frozen or canned)

1/3 cup onion, diced

1/3 cup celery, diced

3 tablespoons butter

1/3 cup all-purpose flour

2 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

Salt & pepper to taste

1 package refrigerated biscuit dough (8 biscuits)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large skillet over medium heat, melt the butter. Add the diced onions and celery, sautéing until they are tender, about 5 minutes.

      Make the Roux: Sprinkle the flour over the vegetables and stir well to create a roux. Cook for 1-2 minutes, allowing the flour to soak up the butter and turn light golden.

        Add the Broth and Cream: Gradually whisk in the chicken broth and heavy cream, stirring constantly until the mixture thickens (about 3-5 minutes).

          Add Chicken & Vegetables: Stir in the shredded chicken, peas, carrots, corn, and cooked potatoes. Season with thyme, salt, and pepper. Cook for an additional 3-4 minutes, ensuring everything is heated through, then remove from heat.

            Transfer Filling to Baking Dish: Pour the chicken and vegetable mixture into a greased 9-inch pie dish or baking dish, spreading it evenly.

              Prepare Biscuit Topping: Open the package of biscuit dough and separate each biscuit. If desired, flatten each biscuit slightly to fit over the filling more evenly.

                Assemble the Pot Pie: Place the biscuits on top of the chicken mixture, leaving a little space between each one for expansion as they cook.

                  Bake: Place the pot pie in the preheated oven and bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.
