Ingredients

2 pounds Yukon Gold potatoes, peeled and cubed

½ cup unsalted butter

½ cup heavy cream

Salt, to taste

Pepper, to taste

1 teaspoon garlic powder (optional)

1 tablespoon fresh chives, chopped (for garnish)

For the Gravy:

¼ cup unsalted butter

¼ cup all-purpose flour

2 cups low-sodium chicken or vegetable broth

1 tablespoon soy sauce (for depth)

Salt and pepper, to taste

Instructions

Prepare the Potatoes: Begin by placing the peeled and cubed Yukon Gold potatoes into a large pot. Fill the pot with enough cold water to cover the potatoes by about an inch. Add a generous pinch of salt to the water.

Boil the Potatoes: Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and let simmer for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Drain and Mash: Drain the potatoes in a colander and return them to the pot. Begin mashing using a potato masher or a ricer for an ultra-smooth texture.

Add Butter and Cream: While mashing, add the unsalted butter and heavy cream. Continue to mash until the desired creaminess is achieved. Season with salt, pepper, and garlic powder (if using) to taste. Keep warm on low heat or transfer to a serving bowl and cover to retain warmth.

Make the Gravy: In a medium saucepan, melt ¼ cup of unsalted butter over medium heat. Once melted, add the flour and whisk continuously for about 2-3 minutes to create a roux (you want it to be golden but not too dark).

Whisk in Broth: Gradually whisk in the broth, ensuring there are no lumps. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 5-7 minutes until it thickens, stirring occasionally.

Season the Gravy: Stir in soy sauce for depth of flavor (this can be adjusted based on taste), and season with salt and pepper to your liking.

Serve: To serve, spoon the creamy mashed potatoes onto plates and drizzle the savory gravy generously over the top. Garnish with freshly chopped chives for a pop of color and flavor. Enjoy!
