Ingredients

For the meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs (preferably Italian style)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley (or 2 tbsp dried)

2 cloves garlic, minced

1 large egg

Salt and freshly ground black pepper to taste

For the marinara sauce:

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 tsp dried oregano

1 tsp sugar

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

For assembly:

4 sub rolls (hoagie or crusty rolls work well)

1 cup shredded mozzarella cheese

Instructions

Make the Meatballs: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, salt, and pepper. Mix well until all ingredients are evenly incorporated. Shape into meatballs, about 1.5 inches in diameter.

Cook the Meatballs: Preheat your oven to 400°F (200°C). Place the meatballs on a baking sheet lined with parchment paper and bake for about 20 minutes, or until they are golden brown and cooked through.

Prepare the Marinara Sauce: While the meatballs are baking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft, about 5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

Simmer the Sauce: Add the crushed tomatoes to the skillet, followed by oregano, sugar, salt, and pepper. Bring the mixture to a gentle simmer and let it cook for about 15–20 minutes to meld the flavors. Adjust seasoning as needed.

Combine Meatballs and Sauce: Once the meatballs are done, transfer them to the marinara sauce. Let them simmer together for about 5 minutes, ensuring the meatballs are thoroughly coated in sauce.

Prepare the Sub Rolls: Slice the sub rolls open without cutting all the way through. You can lightly toast the insides under the broiler for about 2 minutes if desired.

Assemble the Subs: Place 2-3 meatballs into each sub roll and spoon some marinara sauce over the top. Sprinkle with shredded mozzarella cheese.

Melt the Cheese: If you prefer a melted, bubbly effect, place the assembled subs on a baking tray and pop them under the broiler for 2-3 minutes, watching closely to avoid burning.

Serve: Garnish with fresh basil leaves if using. Serve your hearty homestyle meatball subs warm and enjoy!
