1 lb ground turkey

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 cup milk (whole or 2%)

1 medium onion, diced

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon Italian seasoning

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon olive oil

1 cup shredded cheddar cheese (optional)

1/2 cup plain breadcrumbs

1 tablespoon butter, melted

Instructions
 

Preheat the oven: Set your oven to 350°F (175°C).

    Sauté the turkey: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and ground turkey. Cook until the turkey is browned and no longer pink, breaking it up with a spoon, about 5-7 minutes. Season with salt, pepper, Italian seasoning, and garlic powder.

      Combine ingredients: In a large mixing bowl, combine the sautéed turkey mixture, rinsed rice, chicken broth, milk, and frozen mixed vegetables. Stir until well combined.

        Transfer to casserole dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

          Prepare the topping: In a small bowl, mix the breadcrumbs with melted butter. If using cheese, sprinkle the shredded cheddar over the casserole first, then cover with the buttery breadcrumbs for added crunch.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes, allowing the top to become golden and crispy.

              Serve: Carefully remove the casserole from the oven and let it sit for about 5 minutes before serving. Enjoy warm!
