Ingredients

1 lb ground turkey

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 cup corn (fresh or frozen)

1 medium onion, diced

2 cloves garlic, minced

1 cup chicken broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 cups mashed potatoes (prepared ahead or instant)

1 cup shredded cheddar cheese (optional)

2 tablespoons olive oil

Instructions

Preheat the Oven: Heat your oven to 400°F (200°C).

Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent (about 3-4 minutes). Add the ground turkey, cooking until browned and no longer pink.

Add Vegetables: Stir in the diced carrots, peas, and corn. Cook for another 5 minutes until the vegetables are slightly tender.

Create the Filling: Add chicken broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Mix well and simmer for about 10 minutes, allowing the mixture to thicken slightly and the flavors to meld.

Assemble the Pie: Spoon the turkey and vegetable mixture into a greased 9x13 inch baking dish. Spread the mashed potatoes evenly on top of the mixture. If desired, sprinkle shredded cheddar cheese over the mashed potatoes for added flavor and richness.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden and the filling is bubbling around the edges.

Serve & Enjoy: Remove from the oven and let it sit for about 5 minutes before serving. This helps the filling set and makes it easier to serve. Enjoy your homestyle shepherd's pie warm!
